1 Tuna
The meat of the tuna is divided into three types, namely,
Akami – Akami refers to the tuna meat that contains a high amount of protein and very little fat. It is characterized by a fairly dark appearance.
Chu-Toro – Chu-Toro refers to the tuna meat that contains a moderate amount of both fat and protein. It can be identified by an equal percentage of both dark and light spots.
O-Toro – O-Toro refers to the tuna that has the highest amount of fat, and characterized by a marbled appearance.
2 Salmon
Salmon sushi is often eaten “nigiri” style, with a ball of vinegared sushi rice topped with a slice of salmon. It’s commonly enjoyed with wasabi and soy sauce, or salt and a bit of citrus. Although cooked salmon is known as “sake” (pronounced “sha-keh”) in Japanese, when ordering sushi it’s typically referred to as “sahmon”.
3 Shrimp
One of the ubiquitous sushi toppings, ebi come in many different varieties. The most popular are the large, fleshy and striped kuruma-ebi; the small, sweet and translucent ama-ebi; and the plump and sought-after botan-ebi. These are usually served peeled, with the tail left on.
